Super Summer Salad Recipes 2024: Hurry San Jose Summer Is Fading Fast

As summer sneaks away from us we are inspired to bring you these five summer salads that are beautiful, tasty, and easy to make yourself. There is nothing like the fresh crisp taste of a late summer salad.


Heirloom Tomato & Watermelon Salad

A vibrant summer salad featuring a mix of colorful heirloom tomatoes, fresh watermelon chunks, feta cheese crumbles, and fresh basil leaves, drizzled with balsamic glaze and garnished with microgreens.

Ingredients:

2 cups of mixed heirloom tomatoes, sliced

2 cups of watermelon, cubed

1/2 cup of feta cheese, crumbled

A handful of fresh basil leaves

Balsamic glaze

Microgreens for garnish

Salt and pepper to taste


Instructions:

1.Arrange the sliced tomatoes and watermelon cubes on a serving plate

2. Sprinkle the crumbled feta cheese over the top.

3. Add fresh basil leaves and drizzle with balsamic glaze.

4. Garnish with microgreens, and season with salt and pepper to taste.

5. Serve immediately.


Grilled Peach & Burrata Salad

Sweet grilled peaches paired with creamy burrata, arugula, and a light honey vinaigrette. Topped with toasted almonds for a delightful crunch.


Ingredients:

3 ripe peaches, halved and pitted

1 ball of burrata cheese4 cups of arugula

1/4 cup of toasted almonds

2 tablespoons of honey

1 tablespoon of apple cider vinegar

2 tablespoons of olive oil

Salt and pepper to taste


Instructions:

1. Grill the peach halves until slightly charred, then slice.

2. On a large plate, layer the arugula, grilled peaches, and burrata.

3. In a small bowl, whisk together honey, vinegar, olive oil, salt, and pepper.

4. Drizzle the dressing over the salad and sprinkle with toasted almonds.

5. Serve immediately.


Avocado & Citrus Salad

A refreshing mix of creamy avocado, juicy orange segments, and crunchy radishes, topped with a citrusy lime vinaigrette and fresh cilantro.


Ingredients:

2 ripe avocados, sliced

2 oranges, peeled and segmented

4 radishes, thinly sliced

A handful of fresh cilantro

2 tablespoons of lime juice

2 tablespoons of olive oilSalt and pepper to taste


Instructions:

1. Arrange the avocado slices, orange segments, and radish slices on a serving platter.

2. Sprinkle with fresh cilantro leaves.

3. Whisk together lime juice, olive oil, salt, and pepper, then drizzle over the salad.

4. Serve immediately.


Corn, Tomato & Avocado Salad

A summery combination of sweet corn, cherry tomatoes, and creamy avocado, tossed with red onion and a zesty lime-cilantro dressing.


Ingredients:

2 cups of fresh corn kernels

1 cup of cherry tomatoes, halved

1 ripe avocado, cubed

1/4 cup of red onion, diced

A handful of fresh cilantro, chopped

2 tablespoons of lime juice

2 tablespoons of olive oil

Salt and pepper to taste


Instructions:

1. In a large bowl, combine corn, cherry tomatoes, avocado, and red onion.

2. Add chopped cilantro.

3. Whisk together lime juice, olive oil, salt, and pepper, then toss with the salad.

4. Serve chilled or at room temperature.


Strawberry Spinach Salad with Poppy Seed Dressing

Fresh spinach leaves tossed with juicy strawberries, creamy goat cheese, and crunchy pecans, all dressed in a sweet and tangy poppy seed dressing.


Ingredients:

4 cups of fresh spinach leaves

1 cup of strawberries, sliced

1/2 cup of goat cheese, crumbled

1/4 cup of pecans, toasted

2 tablespoons of poppy seed dressing

Salt and pepper to taste


Instructions:

1. In a large salad bowl, combine spinach, strawberries, goat cheese, and pecans.

2. Drizzle with poppy seed dressing and toss gently.

3. Season with salt and pepper to taste.

4. Serve immediately.
